Every detail of the dining experience is shaped by a shared commitment to excellence, from the kitchen gardeners to the kitchen and the front of house. 

Head Chêf Johnny Sarkozi’s carefully created menus change regularly reflecting the changing produce of the season which is all sourced locally and organic where possible.  The vegetables come from the walled kitchen garden at Tankardstown, whilst Johnny enjoys engaging with the local forager seeking wild herbs, sea vegetables, and flowers from nearby forests and shores.  He also spends a lot of time working closely with local farmers and small artisan producers to obtain the best quality possible.

Guests can dine on the terrace in Summer, or in the intimate surrounds and open fire during the winter months. With recent accolades including 2AA Rosettes and RAI’s Best Hotel Restaurant in Meath and Best Chef in Meath, Brabazon Restaurant, offers diners a feast for the eyes and the palate.
